Maybe silly question, but what exactly is the purpose of flybar?

What would happen if I have removed it?

It's primary function is to make the rotorhead stable. Without one the head would be super sensitive to the point of being uncontrollable. You may see most models have weights on the flybar. These are used to adjust the reaction of the head and novices will have them set far out next to the paddles. Most paddles weigh in the region of 30g, but 3D pilots will fit paddles weighing as less as 10g to make the heli more responsive.

June's RC Heli Mag. has an article on "Understanding Flybarless". It compairs the two. More to it than just memoving the bar.
