Hi all.
I have decided to start a new thread for our recipies, Here's on to start it off.
Pumpkin & Leek Soup
1 Kilo Pumpkin ( i use a bit more).2 leeks ( larger ones). 6 cups water. 6 Teaspoons maggi chicken stock ( maggi powder is the best ).
Cook and Blend.

Seems very simple and see if cmax will do it for me some time. Anyway I have one to share:
My simple rice recipe since I was young and now I still like it; especially when it is raining and cool outside.
Cooked Rice (don't make it too dry or soft)
Soy sauce
Green leek (I like it a lot as I eat green leek as vegetable - you can just try with a little first as it tastes and smells very strong)
A few drop of oil
Mix it up and enjoy it.
Sometimes, I also cut fresh cucumber thin and add a little bit of lemon juice
I normally eat cold but if you don't like it cold, fry in this order:
1. Put oil and warm up your pot
2. Put Rice
3. Put soy sauce
4. Mix it up and stir it to make sure it is not stick to the pot
5. Turn off the stove
6. Add fresh cut green leek
7. Add fresh cut thin cucomber and lttle lemon juice if you like.
8. Serve hot

Here comes a really stupid question, are green leeks ordinary leeks, I did a google seach and came up with a green leek orchid but I assume you are not chopping up your wifes orchids, obviously I am not good housewife material or I ought to know this :lol: :lol:

Just out of interest does chinda have a leek orchid?
Your pic shows what we call spring onions in the Uk, at least I think thats what they are so I will try your recipe out today.
Medtech I would try your recipe if I understood one single word of it

Hi Sue, luckily no or I might be confused with green leeks some time :) Because you said that I googled and have just learned about a new kind of orchid. :) My recipe is really a simple vegetarian fried rice. If you don't like vegetarian dish, you can add a fried egg, chicken, port, etc. as you like. That is Eddie's childhood fried rice recipe. This is one of my favorite recipes. Green mango with soy sauce(Golden Mountain Seasoning Sauce) or fish sauce(Three Crabs Brand Fish Sauce). If you don't like soy sauce or fish sauce, you can use salt.
1. Chop and slice the green mango into small pieces.
2. Chop some garlic and hot chilli.
3. Mix sliced green mango with garlic and hot chilli, then put some soy sauce or fish sauce together and add just a litle bit of surgar.
4. The sliced green mango with fish sauce now is ready to serve with fried fish or steamed fish. Oh, don't foget the steamed rice because it tasts better with rice. I am sure, it works with Beer. :) :) :)

Do you have a foolproof way of cooking rice because sometimes mine is a little sticky if you know what I mean.

Hi Sue, do you use one of the rice cookers. We always use a Tiger rice cooker like the one below. There is measurement inside the pot and we normally add one more watter than the number of cup of rice we cook. For example, if you cook 3 cups of rice (provided with the cooker), you would put 4 water, 4 cups of rice, you put 5 water, etc. However, this will depends greatly on what kind of rice you cook - there are many different kinds of rice: some don't need water as much and some need more water. Some are stickier than others. So try to find the brand you like and then experiment with it. Once you get it the way you like, don't change to new brand and always use the same amount of water when cooking.
For the same rice, it will be different only when you get the new crops early of the year (put less water) and later of the year when you cook old crops (put a little more water). Mostly if it is new crops, it would say so on the bag. However, if you buy the rice early in the year, it might be new crops. My mom likes new crops and I hate new crops :) So I would stock old crops when it is geting to the end of the year.
Selecting the rice you like is very difficult. When we decided to switch from white rice to brown rice (Chinda does not like brown rice so we have two rice cookers in the kitchen :)), my mom and I spent a lot of time experimenting with different kinds of brown rice until we get the kind we like and we would travel a long way to get it. I hope I don't confuse you with too much info about the rice. As you know, I like rice since I was a child so I know a lot about it and I tend to talk too much when it is on my topic.

I have never seen one of those cookers but I am going to invest in one if I can find it in the UK.
I use basmati rice and because martin loves curries we usually have it 2 or 3 times a week.
I make plain boiled rice but sometimes add cardamon pods or safron strands.
I love bombay potatoes and also gobi aloo sag.
Your rice with green leeks was very light and made an ideal lunch snack, I have not made any for martin yet because I was just testing the recipe, but have I got the wrong rice then. :?
Martin agrees we need a steamer/ cooker like yours

Hi Sue - I saw a few on here (http://www.amazon.com/exec/obidos/search-handle-url/index=kitchen&field-keywords=tiger%20rice%20cooker&results-process=default&dispatch=search/ref=pd_sl_aw_tops-1_kitchen_5659839_2&results-process=default?tag2=amd-google-20) but they seem to be expensive. I bought them from an Oriental groceries store and I don't think it is that expensive. These are made in Japan and I am sure if there is any oriental groceries stores close by to where you live, they would carry it.
Yes - my recipe is really for snack. I member the old days when I was about 6 or 7. I would go out and play in the rain (back there in Cambodia rains are not as cold like in US or UK). I would look for cool rice in the kitchen after I came back from playing and made that fried rice for myself. Then, I would get in bed with a big blanket on top, listening to the sound of the rain outside until I felt asleep.
I also like curry. Last time my team at work went out for a birthday lunch and we went to a Japenese restaurant. Someone ordered what they called "green curry." I tried it and I like it better than the regular curry. I have not found the recipe and am still looking for. I think they use milk instead of coconut milk (which is thealthier) and it is not as chick and spicy as the regular curry.

This one is for you.

Short grain brown rice - 1 to 1 1/2 cup, best is organic
One large yellow onion - chopped.
Curry paste or curry powder - red or yellow Indian (not Thai)
Olive oil
Cumin
Chili pepper
Sesame oil
Cilantro - chopped
Raisins - one cup
One apple - cored and chopped (not peeled)
Honey
Salt
Celery - chopped
Snow peas - stringy ends chopped off, then chopped
Bell pepper, red, green, or yellow - chopped
Green onions - chopped
Italics = optional ingredients
1 Prepare the brown rice.
Put rice in a big pot, add 1 3/4 cups of water for every cup of rice, bring to a boil, cover, lower the heat on very low, let simmer for 45 minutes, take off heat and keep covered for at least another 10 minutes.
2 Prepare onions and curry oil.
In a large saucepan put 1/4 cup of olive oil on medium high heat. Add a couple heaping tablespoons of curry paste (if it is mild) or add a couple of tablespoons of mild curry powder. Add a dash of chili pepper and cumin and a few drops of sesame oil if you have it. Let the curry simmer for a minute. Add the chopped yellow onion and cook until translucent.
3 Mix rice and onions.
In a large mixing bowl, put in the hot rice and then fold in the onions with the curry infused oil in which they were cooked. You'll need to use a strong wooden spoon to mix. Taste test the rice at this point. If it needs more curry flavor, heat some more curry powder, chili, and cumin in olive oil for a few minutes and add to the rice to desired spiciness.
4 Add other ingredients to taste - cilantro, raisins, apple, celery, snow peas, bell pepper, green onions. Add a couple tablespoons of honey. Add a dash of salt to taste.
5 Chill and serve. Serves 4 to 6.
The secret to this recipe is the cilantro, raisins, and chopped apple. Sesame oil is a nice touch.
You can also add shrimp, large or small, to it to make it more of a cold main salad dish.
The salad gets better the longer it sits in the fridge (to a point) because of the absorption of the curry oil. So it is a good idea to make a big batch because the leftovers are even better than the firsts!

PB Fun Brownies
Ingredients:
* 1/2 cup (1 stick) butter or margarine
* 1 cup sugar
* 1 teaspoon vanilla extract
* 2 eggs
* 6 tablespoons HERSHEY'S Cocoa or HERSHEY'S SPECIAL DARK Cocoa
* 1/2 cup all-purpose flour
* 1/4 teaspoon baking powder
* 1/8 teaspoon salt
* 1-1/3 cups (8-oz. pkg.) REESE'S Milk Chocolate Baking Pieces Filled with Peanut Butter Creme, divided
Directions:
1. Heat oven to 350 F. Grease 8- or 9-inch baking pan.
2. Place butter in medium microwave-safe bowl. Microwave at HIGH (100%) 1 to 1-1/2 minutes or until melted. Stir in sugar and vanilla. Add eggs, one at a time, beating well with spoon after each addition. Add cocoa; beat until well blended. Add flour, baking powder and salt; beat well. Set aside 2 tablespoons baking pieces; stir remaining pieces into batter. Spread batter in prepared pan.
3. Bake 30 to 35 minutes or until brownies begin to pull away from sides of pan. Cool completely in pan on wire rack.
4. Place remaining 2 tablespoons baking pieces in small microwave-safe bowl. Microwave at HIGH 15 seconds; stir. If necessary, microwave an additional 15 seconds at a time, stirring after each heating, until chocolate is melted and smooth when stirred. Drizzle over brownie surface. Refrigerate until drizzle sets up. Cut into bars. About 16 bars.

1. Slice fresh ginger and pan fried until browny(put it a side).
2. Cut chicken meat (breasts,legs,wings) into small pieces(put it a side).
3. Chop garlic into small pieces.
4. Put frying pan on the stove until it hot put corn oil, then put chopped garlic into the hot oil keep stirring (avoid stickiness) until it turn brown, put alit bit surgar keep stirring until the it turn brown, put oyster sauce and a litle bit of soy sauce, then put cut chicken meat into the cooking pan, keep stiring until the chicken meat is cooked.
5. finally put the browny ginger, keep stirring until the chicken meat and ginger is well mixed.

you will need a bowl,spoon,milk,and of course,cereal of your likings.
step 1. pour as much cereal as you would like into bowl
step 2.fill bowl with at least 50% milk,and no more than 75%.Too much milk can result in overflow
step 3.Take spoon,and dip it from the side of the bowl,slowly,to see if there is any excess milk that will flow out.
step 4.Enjoy!
now if you have plain cereal,like wheat thins,then adding some sugar might make your meal a little more enjoyable=)

Now I wouldn't put 50% milk cos it would result in soggy cereal which is something I hate :twisted:
And you know when you finish your cereal and there is milk left in the bowl, I NEVER drink/eat that :lol: :lol: :lol:
And I hate those cereals that when you put the milk in they absorb it, so you have to put some more in and then it gets absorbed again and you end up with what looks like cement.
My favourite cereal, cornflakes with ice cold milk, eat before flakes go soggy give the leftover milk to a pet of your choice in my case a dog.

Place rice, sugar and sultanas in a pyrex dish, mix (with a spoon).
Beat eggs, milk and vanilla together. Pour over rice mix and sprinkle with mixed spice or cinnamon.
Bake for about 2 hours at 300 deg.

Frozen Carob Bananas
1/2 cup (35g) shredded coconut, toasted
3/4 cup (95g) toasted muesli
3 medium bananas (600g)
6 paddle pop sticks
125g milk carob, melted
2 teaspoons vegetable oil
Combine coconut and muesli on oven tray. Cut bananas in half crossways; insert sticks through centre of each bananas half. Combine carob and oil in small bowl; brush over bananas, then roll bananas in muesli mixture.
Place bananas on clean tray, cover with foil; freeze until firm.

4 medium Kiwi fruit
250g Strawberries
1 cup (150g) dark chocolate melts, melted
2 medium Bananas, sliced thickly
1 tablespoon lemon juice
1/2 cup (45g) desiccated coconut
Cut each kiwi fruit into wedges. Dip half of each strawberry in chocolate; allow to partially set. Dip bananas in juice, then coat in coconut, pressing coconut on firmly.
Thread kiwi fruit, strawberries and banana slices onto eight skewers.

Hi Michelle,
Is this for sticky rice? If yes - if you add a little jack fruit (yellow -not green) - it will be very good.
This recipe below has too much frozen jack fruit and coconut milk on it. I only want a little bit fresh jack fruit (slice it small) and coconut milk on it. Here I prefer regular milk over coconut milk for health reasons.

Maybe it can only grow in Asia. In Cambodia people like to grow them because it is very useful fruit. When the fruit still young, we can use as vegetable. When the fruit is rape, we can use as dessert. Whenever we go to Cambodia, we love to eat jack fruit. 8) By the way, Michelle how is your flying ? Did you fly your new heli yet ?
